It’s the final day of COOKIE WEEK here on the blog, and the celebration wouldn’t be complete without sharing a treat for my fur children.

I’ve made cut-out treats before (this recipe makes a TON!), but I wanted to make something EXTRA special for the pups this holiday season.

Bernie’s birthday is December 3, so this recipe also doubled as his birthday treat and Bernie and Rooney seriously LOOOOVE these cookies.

The cookie is made with pumpkin, whole wheat flour, oats, peanut butter, eggs and applesauce and the filling is simply plain Greek yogurt and peanut butter…literally all of my pups favorite things.

The cookies I made were a little large, so I split one cookie between the two dogs.  If you have smaller dogs, or want more cookies – just make the dough into smaller balls before baking!

Another tip – we store these cookies in the freezer so they last longer AND so it takes the pups a little longer to eat them.

Ingredients

Scale
  • For the cookie:
  • 1 cup pumpkin
  • ½ cup peanut butter
  • 2 eggs
  • 1/4 applesauce
  • 11/2 cup whole wheat flour
  • 1 cups oats
  • 1 teaspoon baking soda
  • For the filling:
  • 1 cup plain Greek yogurt
  • 1/2 cup peanut butter

Instructions

  1. For the cookie:
  2. Preheat the oven to 350 degrees Fahrenheit.
  3. Combine all ingredients in a large bowl (pumpkin to baking soda).
  4. Place spoonfuls (depending on how large you want the cookies) onto a parchment lined baking sheet.
  5. Bake for 10 minutes.
  6. Remove from the baking sheet and allow to cool on wax paper before adding the filling.
  7. For the filling:
  8. In a small bowl, combine the Greek yogurt and the peanut butter.
  9. Once the cookies are cool, spoon the filling onto half of the cookies and top with the other half of the cookies.
  10. Store in the freezer.
