These past two weeks have had me feeling a little all over the place. They have been filled with tying up loose ends and beginning new projects. Next week, Brian and I go out of town for a wedding mid-week, which should be an absolute blast. Because I’m missing a good chunk of next week, I’m using that as motivation to work ahead this weekend to really stay on top of things with school and the blog.
Tomorrow, Brian and I are attending Yoga on the Rocks and I am SO excited! While the weather is supposed to be gorgeous this weekend, I think most of my recreational activities will consist of study/work breaks where I go on walks with Bernie and Brian.
Recently for breakfast, I’ve been craving a bit of sweet and savory. To solve this problem, I scramble up 1 or 2 eggs with tons of veggies and cook up 1/4 cup of oats and top with blueberries and cinnamon. So satisfying and problem solved!
I’ve also been loving smoothie bowls due to the warm weather (but let’s be real. I always love smoothie bowls!) This one has a base of 1 banana, 1/4 cup of almond milk, 1/4 cup of water, 1/2 scoop of Vega One protein, and frozen spinach. Topped with: 2 Tbsp Love Grown granola, sliced frozen strawberries, 1 Tbsp peanut butter, and sliced banana.
Lunches have been sautéed greens with reheated roasted vegetables and chicken or egg. I basically just toss everything in the pan and push it around a bit until the greens are wilted and everything is hot. This bowl has spinach, carrots, zucchini, brussels sprouts, sweet potato, and chicken.
This is like a make-shift Asian stir-fry, but it was so good! I sautéed a ton of veggies (bell pepper, broccoli, carrots, water chestnuts, zucchini) with coconut aminos, sesame oil and fresh ginger and served with a side of brown rice.
Planning to do some speed running work this morning with a friend!

Bernie at the dog park! Earlier this week, I went to the Cherry Creek State Park and Bernie had an absolute blast (and we met three other Vizslas!)
Hanging with friends. Last Sunday, Brian and I spent the afternoon with our friends to celebrate Liz’s graduation and we just had such a good time 🙂 We are so lucky to have such a great group out here!
Yoga on the Rocks this weekend!! Not only do I really NEED a little yoga, but I’m just excited because the class should be really great and the weather should be perfect.
Singing with the Denver Dolls. Tonight, I have a performance with them 🙂 It’s always great when I get to sing with those wonderful gals!
Long evening walks with Bernie. It’s not something we do every night, but we have been doing them way more often due to the longer days. I love spending my evenings that way!
