Marie and Claire absolutely LOVE my Cinnamon Banana Oatmeal with Egg. They request it, they eat multiple bowls full of it, and it’s simple to make and packed with nutritious ingredients.

These amped up oats are filling and contain added fat and protein, which gives them a little extra staying power to last until lunch. The sweetness comes from a ripe banana, cinnamon and vanilla (no added sugar!), and the topping options are endless although my favorite toppings are nut butter and berries.

Ingredients in Cinnamon Banana Oatmeal with Egg

Oatmeal (rolled oats or quick oats): The oatmeal can be gluten free if necessary. Oats are rich in fiber, and may be linked with healthy cholesterol levels and a healthy heart.

Eggs Eggs give this oatmeal a nutrient boost with nutrients such as choline, selenium, vitamin A, protein and fat. They add nutrition and creaminess, but don’t really impact the overall flavor.

Banana Bananas give this oatmeal a natural sweetness. They also contain nutrients like potassium, magnesium and fiber.

Hemp seeds Hemp seeds contain so many different nutrients! They contain plant protein, healthy fats and nutrients like Vitamin E, phosphorus, potassium, magnesium, sulfur, calcium, iron and zinc.

Chia seeds Chia seeds contain a high amount of omega 3 fatty acids, which may help reduce inflammation in the body. They also contain lots of fiber, making them great for digestive health.

Cinnamon Cinnamon adds a sweet warmth to this recipe.

Vanilla extract Vanilla extract makes these oats taste a little sweeter without adding extra sugar.

How to Make Cinnamon Banana Oatmeal with Egg

This recipes comes together SO quickly! If there is a morning when I am rushing to get breakfast on the table and I don’t have anything prepped ahead, I make these oats. Start by boiling your water. Once the water is boiled add the oats to the water and quickly mix in the eggs, banana, hemp seeds, and chia seeds. Once the oats are at a thickness that looks good to you, turn off the heat and mix in the cinnamon and vanilla extract. Divide into bowls and top with your favorite toppings! My favorite toppings are berries and peanut butter.

Tips for Making Cinnamon Banana Oatmeal with Egg

You can use quick oats or rolled oats for this, but the quick oats really do cook up a lot quicker (in my opinion), so if you are short on time opt for quick oats. This is a very forgiving recipe, so you can add a little more or less of any of the ingredients and still end up with a delicious and filling bowl of oatmeal!

If you are allergic to gluten or sensitive to gluten, make sure to get gluten free oats.

Ingredients

2 cups water

1 cup oatmeal (quick oats or rolled oats)

1 banana, smashed

2 eggs, lightly beaten

1 Tablespoon chia seeds

1 Tablespoon hemp seeds

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

Toppings of choice: berries, peanut butter, almond butter, banana


Instructions

In a small saucepan, bring the water to a boil.

Once the water is boiling, add in the oats, banana, egg, hemp seeds, and chia seeds. Stir to combine until it is thick and creamy.

Remove the oatmeal from the heat and mix in the cinnamon and the vanilla extract.

Top with desired toppings and enjoy!
