STRAWBERRY SEASON 🍓 Strawberries are high in STRAWBERRY SEASON 🍓 

Strawberries are high in Vitamin C and fiber (among many other nutrients) and are SO sweet this time of year. I love taking my girls strawberry picking so they can learn more about where food comes from and try fruit right off the plant 🌱 

One of my favorite things to make after strawberry picking is strawberry fruit leather. I use the recipe from the @testkitchen The Complete Baby and Toddler Cookbook (it’s a favorite!)

Here is the recipe!
Ingredients:
Vegetable oil spray
1 ¼ pounds strawberries, hulled and chopped
2 large Granny Smith apples, peeled, cored and chopped
¼ cup sugar

Directions:
Preheat oven to 200 degrees and line a baking sheet with parchment paper and spray with vegetable oil spray.
Place strawberries in a blender followed by the apples. Pulse until fruit is finely chopped, scraping down the blender as needed. Add sugar and process until very smooth, about 3 minutes.
Transfer strawberry mixture to large saucepan and bring to boil over medium-high heat. Reduce heat to medium-low and simmer, adjusting heat as needed and whisking often, until the mixture has thickened and reduced to 2 cups, about 30 minutes.
Pour strawberry mixture onto center of prepared baking sheet and use offset spatula to spread into 11x14 inch rectangle. Jiggle and tap the baking sheet to create a smooth, even layer. 
Bake until the mixture has set, feels dry and tacky to the touch and the fruit leather peels away from the parchment easily. 4-5 hours. 
Transfer baking sheet to wire rack and let cool completely, about 30 minutes. Use scissors to cut fruit leather and parchment paper backing. Roll into strips if desired.

✔️ This small toy set was the perfect size for building sandcastles and playing in the sand.
✔️ Brian is obsessed with this @lululemon bag that holds a phone, wallet, keys and chapstick.
✔️ Claire loved sitting on this blanket while playing at the beach.
✔️ Marie swam with these goggles with an extra comfortable band every single day.
✔️ I loved wearing my phone while traveling so I had my phone close and easily accessible.
