Happy Friday Friends!

Recently, time has literally been flying by for me.  Is it seriously Halloween next wee?!

Last night, I hopped over to a coffee shop right after work to do some work and kill some time before heading to Brian’s intramural volleyball game.  It was the first game of the championship, and the first game that I have been able to attend all season.

I felt a little  out of place, considering I was in my work attire and everyone else was in casual volleyball attire.  Even still, it was great to support Brian and his team to their first win of the championships!

 

They did a great job, and won the first two games!   We were out of there in literally a half hour.  I couldn’t believe how quick the games went!

 

This weekend, Brian and I have nothing “scheduled.”  No weddings, half marathons, visits home, no alumni events…nothing!  I am so looking forward to this weekend.

I am looking forward to properly making the grocery list and cooking/eating real meals at the dinner table with Brian rather than eating in the car or at my work desk.  I am looking forward to getting some wedding tasks done, to getting some Halloween treats prepared, to doing a little baking, and really just relaxing!

A couple of days ago at work, one of the guys that works the breakfast at the hotel told me that they ordered too many bananas and they were starting to go bad.  The first words out of my mouth were “Banana Bread!”  He asked if I baked and if I wanted them…the answer was yes and yes.

I guess I didn’t realize just how many bananas he was talking about, but when I got them home I cut them up and stuck them in the freezer…you better believe some sort of banana treat will be made this weekend 😉

And on a final note, I wanted to thank the people over at thinkThin!   A couple of weeks ago, I entered the twitter thinkThin office picture contest, and I won!  I received my goodies in the mail a couple of days ago and have been thoroughly enjoying them.

  1. Your shoes are cute! I love having a freezer stash of bananas. I use them in pancakes and also make banana muffins. My kids love mini muffins.

    • Thanks! The freezer stash of bananas is essential!! I use them in smoothies, pancakes, oatmeal, overnight oats, by themselves, and just about anywhere else I can think to use them 🙂 I also peel my bananas before freezing. The wedding is July 5!!

  2. Yey for not having anything to do for once, sometimes that feels so darn good!
    That’s hilarious how many bananas he gave you!
    Question for you:
    I always face this conundrum when I freeze bananas, when I go to remove the skin of a frozen banana, I can’t do it neatly and get frustrated. Do you have a trick to peeling frozen bananas or am I just a dummy face haha?

    • It sure does feel sooo good! Here is my banana tip: when freezing, I always peel first, cut the bananas into thirds, then freeze in a baggie. Works like a charm every time!
