When we found out that we were moving to Denver two years ago, Brian and I immediately started to accumulate all the winter gear possible.

I even started a Pinterest board JUST for winter gear!

Boy were we wrong! Yes, we definitely need winter gear when we hit the slopes between late November and March, but there are many days even within those months where we barely need a jacket.

Take the fall weather we are currently having…it’s literally been in the 80s for most of it! (although yesterday and today it’s been a bit chilly!! I’m still rockin the smoothie breakfast!)

That being said, I’ve been enjoying smoothies on the reg 🙂  And because I’ve been enjoying smoothies AND I love all things pumpkin, fall, and that involve winter squash…I decided to combine all of those things!

Winter Squash Smoothie via Treble in the Kitchen

This smoothie is sweet and extremely creamy and can be made with pretty much any winter squash (I tried acorn, pumpkin and butternut, but I’m almost positive delicata squash will work!)

It’s a great way to repurpose leftovers of squash you made for dinner (as long as you make some without any savory spices!)

Description

Blended with creamy bananas, sweet maple syrup, and topped with a hint of cinnamon this smoothie is a great way to use leftover winter squash!


Ingredients

Scale
  • 4 Tbsp winter squash puree
  • 1 cup nondairy milk
  • 1/2 frozen banana
  • 1 Tbsp almond butter
  • 2 tsp maple syrup (or any sweetener you prefer)
  • 1/4 tsp pumpkin pie spice
  • pinch sea salt
  • 1/4 tsp vanilla
  • 3 ice cubes

Instructions

  1. Combine all ingredients in the blender, blend until desired consistency and enjoy!
  • Category: low FODMAP, gluten free, grain free, dairy free, vegan
  • Cuisine: breakfast, smoothie
