When I got home yesterday, I had yet another package waiting for me!

 I love getting mail, especially in package form, so I was very excited to see what was in this delivery.

It was a little mini coin purse from Self Magazine (I think) for resubscribing for the upcoming year.  The strange thing was that there was no note or anything inside.  Just this little baby purse.  The reason I think it is from self, is because I think I remember the little coin purse being an incentive to resubscribe right then.

I’m sure I will find some use for it 😉

All day yesterday, I had been planning on making my first spaghetti squash of the season.  Unfortunately, I did not arrive home until after 7pm.  Spaghetti squash takes nearly 40 minutes to cook in the oven and eating dinner that late is too late for me.  Instead, we had leftover salmon over a bed of romaine and spinach topped with tomato, onion, blue cheese, edamame, and cucumbers.

This little quicky-dinner salad was quite tasty if you ask me!

Now, let’s move onto more exciting things!

Last week, Brian’s dad was away on a business trip in Germany.  His homecoming date was Saturday, the very first full day of fall.

If you know me, then you know that I am always looking for a reason to bake something, and I thought that Brian’s dad arrival home from Germany was the perfect excuse to make some of my favorite fall cookies.

There are only two ingredients involved.

These cookies are so simple, so delicious, and just scream fall.

Simple Pumpkin Spice Cookies

Ingredients:

  •  1 box of pumpkin spice cake mix
  • 1 15.5 oz can of pumpkin
Directions:
Preheat oven to 350.  Combine the two ingredients in a large bowl.  Mix until thoroughly combined.  Place spoonfuls of dough onto an ungreased baking sheet.  Bake for 10 minutes.
Remove from oven and allow to cool.  You can eat them plain or you can top them with cream cheese icing a sprinkling of cinnamon.  Enjoy!

I love how simple these cookies are, the fact that I don’t have to use any oil or butter, and I love that whenever I make them for Brian or anyone, they never last for more than a day or two!
