Although Brian and I were hiking, walking, swimming and very active on our honeymoon we never really completed an “official” workout…crazy! I can’t believe that I actually went 10 days without setting foot in a gym 😉
Yesterday was our first day back in our regular routine, which meant we started the work day with our usual Thursday morning Bodypump class. Completing the class was honestly no big deal. It was hard work and fun just like it always has been…but boy do I gotta say as the day continued on my legs started to feel the effects of DOMS (delayed onset muscle soreness), and this morning it has kicked in full swing!
Bodypump hadn’t necessarily gotten “easy” for me, but I definitely did not feel this kind of burn in my body because of how regularly I had been taking and teaching these classes. I feel like I just completed my very FIRST Bodypump class!
Dinner last night (and the night before) was easy peasy because of a little meal prep that occurred before the honeymoon.
I made these burgers before we left and froze them with the hopes that they would thaw easily and make for a quick dinner once we returned from the honeymoon and had no food in our fridge…and that is exactly what happened! They thawed out so easily, and cooked up nicely in the skillet 🙂 I enjoyed mine over salad, while Brian enjoyed his on a bagel bun…both sound like a great option to me!
In a food processor, combine all of the ingredients listed above until a “dough-like” consistency forms. Once you have this, form the “dough” into 4 equal patties. Once the patties are created, you can freeze them for use at a later date or you can cook them up right then and there!
When you are ready to cook, simply set your skillet to medium-high heat. Place the patties on the skillet and cook for about 5 minutes, or until heated all the way through, on each side.
Eat this bean burger on a bun with your favorite toppings (I would recommend fresh mozzarella, tomato, and maybe some basil!) or enjoy on a large bed of greens with a light olive oil and vinegar dressing.

these look so very delish! a pro of rest days or post-vaca workouts is how kickass the workouts you do after time off feel! i love doing a fitness class i was previously sooo used to and then took time off from. it suddenly makes me so sore. can’t lie, my butt is a bit sore today and i love it!

I love being sore from a workout! It’s funny, I’ve dropped my BP weight for legs with marathon training and I’ve found myself getting sore. I think it’s because I’m achieving a greater ROM.
