Wow!

This week has kind of felt like a whirlwind because I feel like I was trying to fit 5 days of work into 3 days so that I could work longer hours yesterday and most importantly because my mom is coming to visit…TODAY!

I am beyond excited to show her my new home 🙂

Here is what our agenda looks like so far:

  • Get coffee at Thump
  • Check out the 16th Street Mall and REI
  • Visit the Botanical Gardens to see the Chihuly exhibit
  • Hike the Flatirons
  • Walk through Cheesman Park
  • Watch some movies and maybe eat ice cream 🙂

I can’t believe that we have been living here for over two months now.  Crazy.  But I think it’s the perfect time for Mom to come check things out.

Five Things I Ate:

  • I roasted my first acorn squash of the season!  SO yummy 🙂

I filled it with a little quinoa, organic chicken, black beans, cumin, salt, pepper, and garlic and I enjoyed every bite!! Served with roasted veggies on the side 🙂

  • This amazing lunch salad of greens, beets, celery, carrot, organic chicken, leftover roasted vegetables, avocado, and microgreens all topped with a dijon and vinegar mixture.  I want another 🙂

  • A new recipe I just perfected…Butternut Squash Vegetarian Chili.  It’s so good and I can’t wait to share the recipe with you!

  • Sweet potato soup.  Seriously the easiest thing ever! Just sweet potatoes, vegetable broth, and almond milk with a little chipotle, salt, and pepper 🙂 So fally tasting!

Five Workouts I Did:

  • Barre
  • Taught Boot Camp

That would be my “group fitness selfie” 🙂  haha!

  • Taught Cardio HIIT
  • Yoga
  • An at-home barre workout Gina (the Fitnessista) and from Popsugar! Definitely check these workouts out if you are short on time!

Five Things Making Me Happy:

  • My mom being in town! I am SO excited 🙂
  • Being done with my midterm! Seriously, it feels like a weight lifted off my shoulders.
  • Our first rehearsal for Holiday Party Singers is this coming Monday, so in my spare time when I’m not studying, creating a workout, cooking, or hanging out with Brian I have holiday tunes on the brain.
  • Kitchen success!  I feel like recently I’ve had a lot of success in the kitchen, which is always a good feeling.  I’m loving the new season and palette of ingredients I can work with, so I’m just kind of going with it!
  • Halloween! I was kind of worried Brian and I wouldn’t have any plans, but he just told me that we are invited to a friend’s Halloween party…now we kind of need to scramble for costume ideas!  Suggestions anyone!?
