This is a little rewind post back to my pre-race dinner on Friday night.  My parents were coming over for dinner, and my mom had given Brian and I a grill earlier in the summer that we had yet to use so I decided on mediterranean turkey burgers as my pre-race fuel.

Guy Food:  Mediterranean Turkey Burgers

Ingredients:

  • 6 oz nonfat plain Greek yogurt
  • 4 oz hothouse cucumbers (about 1/2 cup chopped finely)
  • 1/2 clove minced garlic
  • 1 tsp lemon juice
  • 1 lb extra lean ground turkey
  • 4 oz zucchini, finely diced (about 1 cup)
  • 1/2 cup crumbled herbed feta cheese
  • 1/3 cup finely diced red onion
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 4 100 cal sandwich thins
  • Toppings:  sliced tomato, pickles, onion, romaine, cucumber
Step One:  
Finely chop the cucumber into baby tiny pieces.
Step Two:
Once chopped, add to the Greek yogurt along with the lemon juice and garlic.
Mix together thoroughly, then put in the fridge until the meal is ready to serve.  This will be the sauce to put on the burgers.
Step Three:
Finely chop the zucchini and red onion.

Step Four:

Once chopped, add the zucchini, red onion, feta cheese, salt, and pepper to the thawed ground turkey in a large bowl.

Step Five:

Mix together with your hands.  It’s the only way to get it all mixed!  Just be sure to wash them well before and after 😉

Step Six:

Form the meat mixture into four patties and place wax paper between each patty on a plate.  When ready to place on the grill, take the wax paper and flip it upside down onto the grill.

Step Seven:  

Wait for the burgers to cook on one side until they are easy to lift off the grill with a spatula, if the burger sticks then it is not ready to flip.

We also cooked the corn on the grill. When the burgers are done, place them on the sandwich thins and top with desired toppings!  Don’t forget the special sauce you made at the beginning 😉

Mom brought us fresh tomatoes and basil.  The basil is from a family friend’s basil bush…literally BUSH!  I saw a picture and couldn’t believe how big it was when I can’t even get a little sprout to grow!

She also brought Brian and I pots.  For the past 5 months I have been cooking everything in a giant skillet!…having a real pot will be nice.

The meal was delicious and super filling, I couldn’t even finish it!  But it did give me good race fuel 🙂
