I look tired because this picture was taken after my shift

So after not getting much sleep last night and working my first 8 hour day at my retail job, I was tired.  So I only ran 6 miles…and my feet were killing me the entire time.  I changed my schedule to run 10 miles on Wednesday morning when I have more time before work and in the morning when I am at my perkiest!

Dinner

After my run, it was about 7:30…which is super late for dinner for Brian and I so we were both starving!  Luckily, I prepared dinner this morning so all I had to do was whip up a salad and put the main dish in the microwave.

I bought silken tofu at the store and had no idea what to do with it.  I stumbled across a mac and cheese recipe that called for the silken tofu so I gave it a try and Brian and I were both verrrry pleased with the results.  We even had leftovers to freeze for Brian to eat when I am gone.

Healthified Macaroni and Cheese 2 (original recipe from Peas and Thank You)

Ingredients:e

  • 2 cups whole wheat pasta
  • 2 Tbsp margarine
  • 1/2 block silken tofu
  • 2 Tbsp non-dairy unsweetened milk
  • 1 tsp salt
  • ground black pepper
  • 1/2 tsp dry mustard
  • 8 oz of reduced fat cheddar cheese
  • 1-2 cups steamed broccoli
Preparation:
Boil water and cook pasta according to package directions.  Drain the water from the pasta and return to the pot with the cooked broccoli.  In a blender or food processor combine margarine, tofu, milk, salt, pepper, and mustard.  Add the tofu mixture to the pasta and stir in the cheese until melted. Continue to stir over low heat until creamy.
Makes 4 servings
Tonight I am extremely tired and feel like I have a lot of catching up to do from the weekend in Nashville, so I am off to bed to get a good nights sleep so that tomorrow I can catch up on reading blogs, reading e-mails, and crossing things off of the never ending to-do list.
