It was a GREAT weekend over here.

Saturday morning started with a run.

I followed the run with some work-on-the-blog time at a local coffee shop called Calvin Fletchers.

I enjoyed a honey cinnamon cold brew coffee with a splash of almond milk…yummm.

After working on the blog and a delicious lunch salad, Brian convinced me to take a break and enjoy a little pool time.  Such a great idea!

After pool time, it was bachelorette party time!! (more on that later today!)

Sunday morning a made a delicious smoothie bowl…seriously, this was one of the best.

The smoothie base was just one frozen banana with a half cup of almond milk and a half cup of coconut water with a half cup of strawberries.  It was so smooth and creamy.  I topped it with a handful of homemade granola, peaches, blueberries, banana, and homemade almond butter 🙂

Sunday is usually my day to get ready for the week, so I did my meal plan and fitness plan for the week and I prepped lots of food.

Dinner was simple:  baked cod, roasted broccoli, and roasted sweet potato.

And to top off an amazing weekend…I painted my nails while watching the bachelorette with Brian.

Here is the weekly meal and fitness plan

Meals:

Monday–Brian will make a pizza on flatout bread…I work late this night and my dinner will mostly be snacky-type stuff.

Tuesday–Baked sweet potatoes, side salad, free-range organic chicken meatballs

Wednesday–Sweet potato black bean burgers

Thursday–Taco/Mexican salad

Friday–Wing it…

Lunches for me–3 big salads, and 2 days of tuna salad with lots of veggie dippers

Breakfast–egg white oatmeal with blueberries and banana

What I made ahead of time for food prep:

  • Baked sweet potatoes
  • Hardboiled eggs
  • Breakfasts
  • Chopped veggies
  • Chicken for Brian’s lunches
  • Sweet potato black bean burgers
  • Hummus for snacking

Fitness:

  • Monday–Teach Bodypump and CXWORX
  • Tuesday–Teach CXWORX, morning HIT (high intensity training) class
  • Wednesday–YOGA and possibly kettlebells during lunch
  • Thursday–Bodypump
  • Friday–Bodycombat (only a half hour) and barbell weight lifting at lunch
  • Saturday–early morning run
  • Sunday–OFF

*I’m also thinking of adding an evening easy run in on Wednesday or Thursday night if the weather is nice.  Brian said he would go with me, so I need to take advantage of the opportunity!

And that’s what the week will look like 🙂

  1. What a fab weekend! Your smoothie bowl looks AMAZING. I just had my post-workout smoothie and now I am craving another. Definitely thinking smoothies will become a regular part of my summer meals. I also went on a good run this weekend… loving this weather.
