It has been warm and sunny in Indiana and this fruit and veggie lover is THRIVING!
A few weekends ago, I was preparing to dig into a bit of course work to prepare for my internship, which meant I wanted to keep things super low key in the “plans” department.
Some of my absolute favorite things to do in our new house have been:
I was a happy camper that weekend because my low-key weekend included all of my favorite things…AND these Low FODMAP Lemon Herb Dijon Salmon Bowls.
I hope this whole “throw-everything-into-a-bowl-and-call-it-a-meal” trend never goes away, because we eat almost all of our meals out of bowls…and I love it!
This meal may seem a bit intimidating because there are a few things happening at once, but it really comes together in about 30-40 minutes and tastes great at room temperature. So no need to worry about everything finishing at once!
There is so much flavor (thanks to the new Lemon Herb seasoning from FODY Foods) and texture packed into these bowls, I have a feeling they would please just about any palate 😉
