This simple Slow Cooker Shredded Chicken is a fool proof method for prepping protein ahead of time. I use this chicken in fajitas, on top of salads, in enchiladas, and anywhere else you can think to add shredded chicken!
Chicken breasts (the amount depends on how many you need to use for the week)
Place the desired amount of chicken breasts into the slow cooker and cook on low for about 6-8 hours, or until the chicken is at least 165 degrees Fahrenheit.
It should be very tender and juicy, and easy enough to shred with some salad tongs or a fork.
Store in the fridge for 3-4 days or store in the freezer for up to 6 months.
