Happy last day of March!

I hope this month was fabulous for you, and I hope April is even better.

After looking through my pictures of the weekend, I realized that I had taken LOTS of food pics.  So, here is a peak into my weekend based on what I ate 🙂

Friday

Friday night, Brian and I did our weekly grocery shopping trip.  I was really not in the mood to make a meal, so we picked up salads at the grocery store salad bar for dinner.  Always a favorite treat for us!

After downing our salads, we got busy in the kitchen and baked up a test carrot cake.  We are going to be hosting Easter for my family at our house and I wanted to make sure we had a tasty treat to share.  I think we found a winning recipe!

Saturday

Saturday morning, I thought I woke up fairly early but before I knew it Brian and I were rushing out the door to get to yoga class…but first I enjoyed this delicious breakfast of an egg and spinach scramble with a half baked sweet potato topped with cinnamon.

We attended the free community yoga class at our local Lululemon.  Nothing beats free yoga 😉

It was an amazing practice with an instructor from City Yoga.

Now, you probably can’t tell what the picture below is BUT I did my first successful crow pose!!! Like I said it was a great practice and I felt so accomplished to finally nail the crow!

After yoga, Brian headed out to a meeting and I stayed home to clean the house and get some random to-do’s done.  Before he headed out, we enjoyed a yummy lunch.  My lunch was collard green wraps stuffed with Salmon Cakes, sprouts, avocado, dijon mustard, carrots, and peppers with tomatoes, olives, and snap peas on the side.

We were having date night in that night where I picked the meal and Brian picked the dessert which was a decadent chocolate cake…but boy did it taste good!

I was in charge of picking the dinner recipe, so I used a mango salsa and halibut recipe my mom shared with me, this yummy kale caesar salad recipe, and roasted green beans.  I had to get some extra greens in there to make up for that chocolate cake 😉

After dinner, we watched a movie and just enjoyed relaxin’ at home.  One of my favorite things to do with Brian.

Sunday

Sunday morning I got up early to have another productive day and was craving fruit and veggies.  Breakfast was another scramble, but this time I used collard greens (yum!) and had frozen strawberries and bananas on the side.

Lunch was a GIANT (seriously, this smoothie was HUGE) smoothie bowl with the leftover kale caesar salad.

Dinner was kind of like a you pick two from Panera.  A delicious salad with kale, spinach, romaine, carrots, celery, onion, avocado, and hummus with some of my easy Butternut Squash Soup.

After dinner, Brian and I headed out for a quick walk to soak up some of the sun before it went down for the evening.  The perfect way to end the weekend.
