Happy Monday!

I just have a feeling that this week is going to be a great week.  Ever have that feeling?  Not sure what it is, but I like it 🙂

Breakfast was a new-to-me concoction of “Oatless Oats” from Carrots n Cake.

This little breakfast was SO GOOD!  I know that it is technically NOT Whole 30, because it is paleoifying a non-Whole 30 compliant food, but since I am technically done with my Whole 30 Challenge and I am monitoring how my body reacts to non-Whole 30 foods I decided that it was ok to experiment with  this type of breakfast too!

Such a winner. 🙂

Now that we know about breakfast, let’s do a quick recap of the weekend!

Saturday

Saturday morning started out with another breakfast experiment.  Not quite so pretty, but it really was tasty!

1 egg with 2 egg whites, avocado, banana, and a drizzle of coconut butter. (Don’t knock until you try it!)

I logged a few miles on the treadmill with this interval workout from Fitting It All In.  This workout is pretty much a go to for me when I am adding intervals into my training.

Brian and I got all dressed up for the Dental School Valentine’s Day dance.

We had a few friends over before the dance too!

These guys are all 4th year dental students and will be graduating with Brian in May…crazy!

The wait staff at the dance brought our meals out to the tune of “Be Our Guest.”  Absolutely perfect.

We were entertained by the Dental School’s a cappella group Vertical Dimension.  They did amazing!

Sunday

I spent the morning prepping food for the week including this Slow Cooker Ratatouille.  Yay for getting things prepped to help streamline my kitchen time for the week 🙂

Made a quick trip to Michael’s to purchase some food photography equipment…we will see how it all turns out!

Our weekend ended with a delicious Valentine’s Dinner at Brian’s parents house.

It was a pretty great weekend if you ask me 🙂
